March is Dear Hubby's favorite month of the year. I'm pretty sure it's because it's the time of year that McDonalds puts out their Shamrock Milkshakes. He's pretty much obsessed with the shakes.
This week he goes away for a week of training and I'm convinced he's going to spend the whole week with a milkshake attached to his hand. So before he left, it was fun to give him a little suprise last night for dessert with these Shamrock Milkshake Whoopie Pie Cookies. Maybe now he'll miss us almost as much as his shakes in April.
I found the cupcake recipe at Better Homes and Garden's website and adapted it to my new Babycakes Whoopie Pie Maker for some fun frosting filled cookies.
They were not that difficult to make, but did take what seemed like a hundred bowls to whip up. Yikes, talk about lots of dishes now...but Dear Hubby loved them and it was so worth it.
To make them, separate 4 egg whites into a separate bowl and allow to sit at room temperature for about 30 minutes.
In medium bowl, stir together flour, baking powder, baking soda, and salt.
Combine buttermilk and mint.
I couldn't find buttermilk at my local stores, so if you can't either, you can add 1 cup of milk and 1 Tbsp vinegar together. Allow to sit for ten minutes.
In large mixing bowl, beat shortening with an electric mixer for 30 seconds. Gradually add sugar, about 1/4 cup at a time, beating on medium speed until light and fluffy. Beat in vanilla. Add egg whites, one a time. Alternately, add flour and buttermilk to shortening mix.
Tint frosting green.
Using a Babycakes Whoopie Pie Maker, add 1 Tablespoon of batter to each cake well. Cook for 2 minutes.
For frosting, place white chocolate in a large bowl. In a small saucepan, heat whipping cream until simmering. Pour over white chocolate, let stand, without stirring for 5 minutes. Stir until smooth, let stand for 15 minutes. Gradually beat butter into chocolate mix. Gradually beat in powdered sugar.
Using one whoopie pie side, spread with white chocolate frosting. Add another whoopie pie to top.
